Here at Western Herd, we’re always eager to share what goes on behind closed doors. That’s why we’ve decided to do a deep dive into the core ingredients that shape the beers you love in a new blog series. Each post will delve into the history, use, and impact of these essential components. We’re starting with a favourite among brewers and drinkers alike: hops.

Hops: The Spice of Beer
Hops have a storied history in brewing, with records of their use dating back to the 9th century, although they likely were used even earlier. Originally, hops were added to beer for their preservative qualities, helping to extend shelf life during transportation. Today, we celebrate them primarily for the complex flavours and aromas they impart. These range from earthy and spicy to floral and fruity.
The Role of Hops in Brewing
In the brewing process, hops are essential for adding bitterness, flavour, and aroma. They counterbalance the sweetness of the malt, providing a more rounded and complex taste profile. Brewers add hops at various stages during brewing, from the initial boiling phase, where they contribute bitterness, to later stages or even post-fermentation, enhancing aroma without increasing bitterness.
The impact of hops extends beyond taste and smell. They also contribute to the beer’s head retention and stability, influencing how the beer looks and lasts once poured.
The Impact on the Final Beer
The variety of hop, its form (such as pellets, whole leaf, or extract), and the timing of its addition can drastically affect the beer’s final character. For example, early additions in the boil bring out the bitterness. Late additions emphasize aromatic qualities. Dry hopping, or adding hops after the wort has cooled and during fermentation, intensifies aroma without adding bitterness, creating those intensely flavourful and aromatic IPAs that many of us love.
